The other slow morning.

Pour-over is the coffee equivalent of whisking matcha. You grind, you bloom, you pour in slow circles and wait. It takes about three minutes and it cannot be hurried, which is the entire reason people who could own a push-button machine choose this instead.

This is the genuine Hario V60 set, not an imitation of it. The V60 is the cone that made this method mainstream, and it is still what most cafés and most competition baristas reach for.

What's in the set

  • Hario V60-02 dripper. The 60 degree cone with the spiral ribs and the single large hole. Those ribs are the design: they let air escape as water passes, so the flow rate is yours to control rather than the cone's.
  • Hario V60-02 glass server. Brews straight into it, pours straight out of it. Holds about 2 to 4 cups.
  • 40 V60-02 paper filters to get you started.

How to use it

  1. Rinse the paper filter with hot water. This removes the papery taste and warms the server. Tip the rinse water out.
  2. Add about 22g of medium-fine ground coffee. Level it flat.
  3. Bloom. Pour just enough water to wet the grounds, roughly 50g, and wait 30 seconds. It will swell and bubble. That is trapped carbon dioxide escaping, and skipping this step is the most common reason pour-over tastes sour.
  4. Pour the rest slowly in circles, working outward and back in, up to about 360g of water total.
  5. The whole brew should finish in around 3 minutes. Much faster means your grind is too coarse; much slower means too fine.

Water temperature

Around 200°F, so just off the boil. That is hotter than matcha wants, which is worth remembering if you make both. Coffee needs the heat to extract properly. Matcha scorches at that temperature.

Why we stock this one

We looked at cheaper cones and collapsible travel versions. The V60 stays because it is the one you will not replace in a year. Glass and ceramic hold heat properly, the ribs actually do something, and filters for it are available in every grocery store in the country, which is not true of the more unusual shapes.

Care

Both pieces are dishwasher safe, though the glass server lasts longer with a hand wash. Rinse the cone straight after brewing so coffee oils don't build up and turn rancid, which will make everything taste stale.
