Whisking matcha is not an efficient way to make a drink. That is the entire point. You measure, you sift, you whisk in a slow W until the foam turns pale and fine, and for about ninety seconds there is nothing else you are supposed to be doing.

This is everything you need for that, and nothing you don't.

What's in the kit

• Bamboo whisk (chasen). Hand cut from a single piece of bamboo. The fine prongs are what break up clumps and build a proper crema instead of a thin froth.
• Stainless steel sifter. The step most people skip, and then wonder why their matcha is lumpy. Matcha compacts in the tin, and sifting is the fix.
• Bamboo scoop (chashaku). One heaped scoop is roughly a gram. Two makes a standard bowl.
• Bamboo spoon. For stirring matcha as it settles, and for handling the powder without a metal taste.

All natural bamboo, with no varnishes or chemical coatings.

Bought separately, this costs a lot more

Specialist tea houses sell these pieces one at a time. A good chasen alone typically runs $35 to $55, a proper sifter around $30, and a bamboo scoop another $17 to $25. That is comfortably north of $85 for three items, and most of it ships from overseas on a multi week wait.

Why there's no bowl

Because you probably already own one. You need width for the whisk to move freely, and a cereal bowl or soup bowl works genuinely well. A ceramic chawan is a $40 purchase we would rather not force on you before you know whether you like making matcha at all.

How to use it

1. Sift 1 to 2 scoops of matcha into a wide bowl.
2. Add about 2 oz of water at roughly 175°F. Just off the boil, then wait a minute. Boiling water scorches matcha and turns it bitter.
3. Whisk briskly in a W motion, not a circle, for 15 to 20 seconds until a fine even foam forms.
4. Drink as is, or top with 6 oz of milk over ice.
5. Rinse the whisk in warm water, no soap, and stand it upright to dry.

Care

Hand wash only, and don't let the bamboo soak. Rinse, shake, and stand the whisk upright to air dry rather than laying it on its side. Treated this way a chasen lasts six months to a year of daily use. Left wet in a drawer, about two weeks. When it eventually wears out, and it will, because that is what bamboo does, a replacement is $39.

A note on the tea

Matcha powder is not included in this kit. Good matcha is perishable and varies enormously by harvest, so it is worth buying fresh and in small tins rather than in bulk.
